VENISON CARPACCIO - (Blesbok this season)

The freshly harvested organically certified venison is lightly frozen then sliced into paper thin slices, plated flat in the traditional manner and dressed with olive oil, lemon juice, a touch of salt and pepper.
Garnished with wild organic rocket and cottage cheese with a touch of spring onion for zing.
The venison is aged slightly before it is used so the meat texture is smooth and creamy.
The harvesting process is key in this process to eliminate any adrenalin or lactic acid build-up in the muscle tissue.

We use organic and non GMO produce as a rule unless stock is not available. Standard health benefits are organic, fresh, non GMO. We use lower heat cooking for more natural enzymes. All our cooking is done with raw coconut oils and grass fed butter
