DISH OF THE WEEK - MOUSSAKA (our way)


The layers of organic beef sauce Mediterranean style made with cherry tomatoes, onion and herbs, between separately grilled eggplant slices and good quality mozzarella cheese.

This modular dish is assembled just before baking for a short time to preserve the individual flavours. Accompanied by a wild rocket and olive pesto, this dish draws out all the best elements of Greek cuisine.

The sweetness of the cherry tomatoes with the robust flavour of beef and the unusual flavour of the rocket and olive pesto bring into light the distinctive flavour of eggplant as never before.

Our unorthodox suggestion for wine pairing will be to try this dish with a medium cream sherry to extract the sweetness of the cherry tomato and the underlying sweetness in the eggplant.

A fantastic accompaniment to this dish would be our super fresh and tasty Santorini Salad.

Remember ... we use organic and non GMO produce as a rule and all our cooking is done with raw coconut oils and grass fed butter.
