ORGANIC AUTUMN PORK FILLET MEDALLIONS
This best seller is a winner with texture, flavour and has lots of depth. Pork is traditionally smoked or boiled but we grill it South African style with a tamarind and plum sauce reduction. The fine texture of the pork fillet with the sweet yet tangy sauce is served with a standard side salad which lightens its finish. This can be accompanied with our range of vegetable starches available on our Seasons boards. A light delicate dry white wine will pair well with this dish and leave a lasting impression.

Our pigs are given a nutritionally balanced diet, free of antibiotics, growth hormones, preservatives and any synthetic additives. They have access to clean water and small open shelters lined with straw provide warmth in the winter and protection from the harsh sun in summer.
